- 3 slices White Bread
- 2 leaves Round lettuce
- 50g Roasted Red Peppers
- 2 Large Sliced Portobello mushrooms
- 50g Caramelised Red Onions
- ½ Avocado
- 4 slices Beef tomato
- 2 slices Vegan Bacon
- 100g Lightly seasoned Tofurky
- 3 tbsp. Lion Vegan Mayo
Ingredients
Method
1) Lightly toast the 3 slices of white bread
2) In a frying pan sautee in a little oil the sliced mushrooms until soft
3) Place the toast onto a white chopping board and spread 1 tbsp. of Vegan Mayo onto each slice
4) On the first slice put the lettuce on top of the mayo, and top with the roasted peppers and cooked sliced mushrooms, caramelised onions and sliced tomato
5) Place the second slice of toast on top with the mayo facing upwards
6) Top with the sliced avocado, Vegan Bacon and Tofurky
7) Place the third slice of toast on top with the mayo facing inwards to complete the sandwich
8) Slice into triangles and place on a plate, secured together with a skewer
